The chocolate glaze adds a glossy finish, making these donuts as beautiful as they’re tasty.

Perfect for breakfast, dessert, or a sweet snack, these donuts are sure to impress family and friends alike. The addition of spices not only enhances the chocolate but also adds a layer of warmth that’s characteristic of Mexican cuisine. By using a donut pan, you achieve that classic donut shape while keeping the recipe light and baked rather than fried.

These donuts are easy to prepare and can be made ahead of time, making them a fantastic option for entertaining or casual get-togethers.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons cocoa powder (for glaze)
  • 2-3 tablespoons milk (for glaze)

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick spray or oil to prevent the donuts from sticking. This step is essential for easy removal once baked.
  2. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, salt, cinnamon, and cayenne pepper until well combined. This dry mixture will form the base of your donuts.
  3. In a separate bowl, combine the buttermilk, vegetable oil, egg, and vanilla extract. Whisk these wet ingredients together until smooth and fully incorporated before adding them to the dry ingredients.
  4. Pour the wet ingredients into the bowl of dry ingredients and gently fold them together until just combined. Be careful not to overmix, as this can lead to dense donuts. The batter should be thick and slightly lumpy.
  5. Transfer the batter to a piping bag or a zip-top bag with the corner cut off. Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full to allow for rising.
  6. Bake the donuts in the preheated oven for 12-15 minutes, or until a toothpick inserted in the center comes out clean. Once baked, remove the pan from the oven and allow the donuts to cool in the pan for a few minutes before transferring them to a cooling rack.
  7. While the donuts are cooling, prepare the chocolate glaze by whisking together the powdered sugar, cocoa powder, and enough milk to achieve a smooth, pourable consistency. Adjust the thickness as desired.
  8. Dip the top of each cooled donut into the chocolate glaze, allowing any excess to drip off. Place the glazed donuts back on the cooling rack to set.

Extra Tips:

For an extra kick, consider sprinkling a pinch of sea salt on top of the glaze before it sets. This will enhance the flavors and add texture. If you don’t have buttermilk on hand, you can make a quick substitute by adding one tablespoon of vinegar or lemon juice to a cup of milk and letting it sit for 5 minutes.

These donuts are best enjoyed fresh but can be stored in an airtight container for a couple of days.

Enjoy your spicy and sweet creation!
