Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder

  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for glaze)

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray. This will guarantee that your donuts come out easily after baking.
  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined. This dry mixture will form the base for your donuts.
  3. In another bowl, combine the buttermilk, melted butter, egg, and vanilla extract. Whisk until smooth, then gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; be careful not to overmix.
  4. Transfer the donut batter into a piping bag or a ziplock bag with the corner snipped off. Pipe the batter into each donut cavity, filling them about halfway. This allows space for the donuts to rise while baking.
  5. Bake the donuts in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a cooling rack.
  6. While the donuts are cooling, prepare the raspberry filling by simply warming the raspberry jam in a small saucepan over low heat. Once warm, transfer it to a piping bag and set it aside.
  7. Once the donuts are completely cooled, use a piping bag to inject the warm raspberry jam into each donut. You can insert the piping tip into the side of the donut for even filling.
  8. For the chocolate glaze, whisk together the powdered sugar, cocoa powder, milk, and vanilla extract until smooth. Dip the tops of each filled donut into the glaze and let the excess drip off before placing them back on the cooling rack.

Extra Tips:

To make the filling process easier, you can also create a small hole in the side of each donut with a skewer before filling. Additionally, feel free to customize the glaze by adding a splash of espresso or flavored extracts for a unique twist.

These donuts are best enjoyed fresh, but they can be stored in an airtight container for a couple of days.
