This no-bake pie is perfect for gatherings, offering a visually stunning presentation with its vibrant green filling. The creamy texture and subtle sweetness of the matcha filling complement the chocolate crust, making it a delightful treat for both matcha lovers and newcomers alike.

The combination of matcha and mint gives this pie a invigorating quality that’s perfect for warm weather, while the chocolate crust adds a rich contrast. Easy to prepare, this dessert doesn’t require baking, allowing you to whip it up quickly and store it in the refrigerator until you’re ready to serve. Whether you’re hosting a dinner party or simply want to satisfy your sweet tooth, Matcha Grasshopper Pie is sure to impress.

Ingredients:

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 2 tablespoons matcha powder
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin (optional, for added firmness)
  • 2 tablespoons water (if using gelatin)

Instructions:

  1. Begin by preparing the crust. In a mixing bowl, combine the chocolate cookie crumbs and melted butter, stirring until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a pie dish to form a crust. Place it in the refrigerator to set while you prepare the filling.
  2. In a small saucepan, sprinkle the gelatin over the 2 tablespoons of water and let it sit for about 5 minutes to bloom. After blooming, gently heat the mixture over low heat until the gelatin is fully dissolved. Remove from heat and set aside.
  3. In a separate mixing bowl, beat the heavy cream using an electric mixer until soft peaks form. Gradually add in the sweetened condensed milk, matcha powder, peppermint extract, vanilla extract, and the dissolved gelatin (if using). Continue to mix until everything is well combined and the mixture is smooth and fluffy.
  4. Carefully pour the matcha filling into the prepared chocolate crust, smoothing the top with a spatula. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set. The longer the pie cools, the firmer the filling will become.
  5. Once the pie is fully set, remove it from the refrigerator, slice it into wedges, and serve chilled. You can garnish each slice with whipped cream or a sprinkle of matcha powder for an extra touch.

Extra Tips:

For a stronger matcha flavor, feel free to adjust the amount of matcha powder according to your taste preferences. If you want to make the pie even more decadent, consider adding a layer of chocolate ganache on top of the filling before chilling. Additionally, verify that your heavy cream is very cold for better whipping; this will help achieve the light and airy texture desired in the filling.

Enjoy your unique dessert creation!
