Instant Pot Rice Pudding is a comforting dessert that combines creamy rice with the warm flavors of cinnamon and vanilla. This dish is perfect for those who crave a sweet treat that’s both simple and satisfying. The Instant Pot makes it incredibly easy to prepare, greatly reducing the cooking time compared to traditional stovetop methods.

With its rich texture and delightful sweetness, this rice pudding is sure to become a family favorite. This recipe is versatile, allowing you to customize it with your favorite toppings such as raisins, nuts, or fresh fruit. The Instant Pot locks in moisture and flavor, resulting in a luscious pudding that’s perfect for serving warm or chilled.

Whether you’re making it for a special occasion or a casual weeknight dessert, this rice pudding is both a nostalgic and delicious option that everyone will love.

Ingredients:

  • 1 cup Arborio rice
  • 4 cups milk (whole or almond)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • Whipped cream or additional cinnamon for serving (optional)

Instructions:

  1. Rinse the Arborio rice under cold water in a fine-mesh strainer until the water runs clear. This helps to remove excess starch and guarantees a creamy texture in the finished pudding.
  2. In the Instant Pot, combine the rinsed rice, milk, sugar, vanilla extract, ground cinnamon, and salt. Stir well to combine all ingredients evenly.
  3. Secure the lid on the Instant Pot and set the valve to the sealing position. Select the “Porridge” setting or manual high pressure for 10 minutes. Once the cooking time is complete, allow for a natural pressure release for 10 minutes before turning the valve to release any remaining pressure.
  4. Carefully open the lid and stir the rice pudding well. If using, fold in the raisins at this point and let the residual heat plump them up. The pudding will thicken as it cools, so if it’s too thick for your liking, you can stir in a little extra milk until you reach your desired consistency.
  5. Serve the rice pudding warm in individual bowls, garnished with whipped cream, a sprinkle of cinnamon, or any other toppings you prefer. Alternatively, you can chill it in the refrigerator for a few hours and serve it cold.

Extra Tips:

For a richer flavor, consider using a combination of milk and cream. You can also experiment with different spices, such as nutmeg or cardamom, to tailor the pudding to your taste. If you prefer a more decadent dessert, try adding a touch of sweetened condensed milk or coconut milk for a unique twist.

Leftover rice pudding can be stored in the refrigerator for up to three days and reheated gently on the stove or in the microwave.

Enjoy your creamy creation!
