Ingredients:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Additional powdered sugar for dusting
Instructions:
- Start by preparing the crust. In a mixing bowl, combine the all-purpose flour, powdered sugar, and melted butter. Mix until well combined and crumbly. Press the mixture firmly into the bottom of an 8-inch square baking dish lined with parchment paper.

- Once the cooking time is complete, allow a natural pressure release for about 10 minutes before carefully releasing any remaining pressure. Remove the baking dish from the Instant Pot and let it cool to room temperature.
